I'll add pictures later but for now, here's your Tuesday Tomato post.

Roasted Tomato Sauce

Take about 1400 grams raw garden tomatoes and slice them into quarters or halves, depending on the size. Place them cut side up on an oiled cookie sheet and stick the whole shebang in a 350-degree oven for about thirty minutes. When done, pull out and set aside.

Chop as much garlic as you'd like and one medium onion. Stick in a frying pan with some olive oil and turn the thing on to medium-high. Saute until the garlic starts turning brown and the onion softens. Splash in some alcohol to deglaze (I've used white wine and sweet vermouth. Both were yummy.). Next, add the tomatoes, fresh basil to taste, and salt and pepper to taste. Bring to a boil and then reduce heat the medium-low. Simmer until saucy.

Serve over cooked pasta or freeze for a couple of months.
