How to Use Your Left-Over Polenta

After serving up the night before and before the polenta congeals into a hard lump, spread it in the bottom of a pie plate or square cake pan. Cover and put in the fridge. The next day, pull it out and stick it in the oven for a bit to get it to room temperature. Take it out. Turn on the broiler. Layer sliced mozzerella on the top. Stick it back in the oven until the cheese begins to melt. Pull it out and sprinkle chopped basil and tomato slices over the top. Salt and pepper to taste. Stick it back in the oven until the tomatoes are heated through. Eat. Have ice cream for dessert.
