(Almost) instant recipe of the day
Neither Zh. nor I have been in the mood to cook lately, so dinner has become a case of quick and easy recipes. But being who we are (hippies in the wrong era) we can't just order in a pizza or go to No Frills and buy a frozen lasagna. Of course not. We have to actually cook something, from scratch, using real ingredients (so no canned cream of mushroom soup. I know. We don't know what we're missing).
So here is tonight's recipe: Roasted vegetables with feta
-Cut up a bunch of root-ish vegetables (we like potato, sweet potato, fennel, parsnip, red pepper, shallot, garlic) into more or less even, sort-of bite-size chunks.
-Toss in olive oil, season with salt and pepper.
-Throw into a big pan or cookie sheet and roast at 450 degrees F for about an hour, stirring occasionally.
-Top with crumbled or sliced feta cheese and bake for another 10 minutes, or until cheese is starting to brown.
-Serve with green salad, bread, and, if you're feeling ambitious, some hummus (homemade, of course) for extra protein.
